It's the second Friday of Lent and you know what that means…no meat all day!
Throughout the season of Lent, Christians abstain from meat on Fridays. This is done out of reverence for Good Friday, the day that Jesus died on the cross.
If having a meatless Friday strikes fear into your heart, take courage! Making your Friday meatless doesn’t have to be difficult.
Today, I thought I’d share one of our favorite (and super easy!) meatless meals…my nana’s amazing Shrimp Creole! Plump shrimp in a tomato creole sauce over steamed rice…you won’t believe how easy and delicious it is! Serve it with some crusty French bread and enjoy!

Nana’s Shrimp Creole
3 tablespoons olive oil
2 cups diced onions
1 cup sliced celery
1 clove of minced garlic
1/4 cup of flour
1 teaspoon salt
1 teaspoon sugar
1 tablespoon chili powder
1 cup of water
2 cups petite diced canned tomatoes
1 14 oz can of tomato sauce
1 teaspoon vinegar
2 cups uncooked shrimp
Sauté onions and celery in olive oil. When translucent and tender, add garlic and sauté for one minute. Add flour, salt, sugar, chili powder and water. Stir until combined. Add tomatoes, tomato sauce and vinegar. Bring to a low boil. Add shrimp and stir until shrimp are pink. Serve immediately over hot rice.
Mmmm. Shrimp Creole. My mouth is watering.
The best I ever had was when I was in New Orleans years ago.
But now, alas, my wife is allergic, so I only get shrimp when we eat out.
